Add concrete examples and notes to regression test docs

In the last release testing phase I relied on previous notes to do this because I don't think it's documented anywhere else. We might as well put it in this document if others want to test or develop tests locally, it makes it a little bit more accessible. Does this look OK to you @beyang?
