JetBrains: Auto-update changelog during the release

Administrator requested to merge dv/jetbrains-update-changelog-for-2.0.1 into main

Just the version bump as a result of the release process. Also left the automatic ### Added, ### Removed, etc. sections in the changelog files to allow for a comprehensive feature list next time.

Test plan

No need to run anything, only docs change.
