doc: document how to configure OpenTelemetry and update Kubernetes (no Helm)

This PR makes a start with the documentation for OpenTelemetry integration, specifically on how to configure a tracing backend. In the future, this will be extended with further configuration options for tracing (and later on, also other telemetry signals).
