WIP: docs: update helm aws guidance for EBS storage class

Nudge the customer to choose the EBS provisioner that applies to their situation.

This is a problem because if the customer doesn't choose the correct provisioner, their StorageClass won't work.

Open questions:

  1. Should we provide guidance on how to discover which storage plugin their EKS cluster implements?
  2. What's the best way to convey that the customer has to make a choice within a code snippet or within a procedure?
