sg: simplify jaeger binary naming

The way the script guess the binary name doesn't play well with $() so I just removed it. It's not clear what would be the benefit of having anything else that the version under the local sourcegraph/.bin/ folder.

Test plan

Tested locally, got asked by the fw about it with the correct path.
