insights: Add more backend pings to docs

Description

This adds documentation for a few pings that were added in 3.34, as well as the 3 new (insights specific) ones that are being added in 3.38.

Test plan

Docs only. I ran this on http://localhost:5080 to verify that things looked as expected.
