ci: add a command to capture errors in scripts

TODO:

  • Create a Sentry project for the CI 🔴 (blocked)
  • Set the secrets accordingly (CI_SENTRY_DSN to avoid triggering other errors reporting in CI)
  • Trigger a real failure (it was sent but was discarded because we hit the quota recently)
