Add/update Amplitude notebooks for "quick start" visitor/authenticated tours

W/ a new release/migration of the "getting started" tour to new UI/UX designs (https://github.com/sourcegraph/sourcegraph/issues/28322), we need to update charts based on the flow/events changes:

• Quick start tour for visitors
• Quick start tour for authenticated users
