Productionize Docker Compose for initial 1.0 customer release

Delivery will prioritize shifting all incoming self-service customers to a Docker Compose instance. In order to do so, the current Docker Compose instance needs to be ready for customers to use.

Scope:

• Documentation Update
• Installation Process
• Remove custom variables for Goldman Sachs
• Performance Testing
