Track extensions registry UI clicks

Related to #11872 (closed), to measure success, but not a priority because:

1. We might get this data from cloud (less work than pings)
2. If the extensions pings look good, we may not need this data as badly / we can't dig in until we know if the success of "using an extension" is working
